
Hey guys! New Recipe. This one is really simple.
Country Breakfast Scramble
You'll need:
Tofurkey Italian Sausage- can be found at Whole Foods or Trader Joes (morning star sausage patties are a great option as well)
Flax, Wheat or Multi-grain waffles
Butter substitute-We like Earth Balance
Agave Nectar (Trader Joes, Whole foods or health food store)
Firm Tofu (you can also use tofu that is already seasoned, we like garlic pepper which nowadays can be found at your local Wal-mart as well as health food stores)
Mixed salad greens
Onions
Tomatoes
Granulated Turmeric (found in the seasoning section-this is what gives the tofu it's egg like color)
Cheese (optional)
Mushrooms (optional)
Red, yellow, green peppers (optional)
Olive oil
Sea Salt
Pepper
Tofu Scramble:
Add olive oil to skillet-on medium heat. Crumble tofu into heated oil (remember:if you freeze the tofu the night before and let it thaw you'll have a more egg like consistency.)
Let the tofu brown.
While Tofu is browning, chop onions and peppers
Add salt to your tofu- taste. Add pepper to taste. Add a pinch or butter substitute. Add your granulated turmeric until you get the color your want (see pic above)
Add onions and peppers, let cook until your veggies soften or you can leave them crisp if you like.
Add your mixed greens last covering the top of the entire scramble, turn your oven eye to low, cover and let the moisture wilt the salad greens.
After about five-ten minutes-remove the top, stir everything together and serve.
Italian Sausage:
I freeze these too, but you don't need to.Slice your sausage into two or three slices with a nicely sharpened knife.put a bit of olive oil in the pan or butter substitute.
Toss in your sausage and let them brown on both sides.
Waffles:
Uh-I'm sure you guys know how to make frozen waffles:) slap on butter substitute and agave syrup.
Grits as a side dish never hurts:)-we recommend Polenta, but the grits you grew up on are fine.
Finally, Serve up your Country Breakfast Scramble and enjoy!
