Recipe of The Month


Vegan Safari Chili

You will need:

1 package of beef vegan/veggie crumbles (we like Yves)
Half a package of black beans or 1 cup
wild rice (any type will do, but we like black rice, it keeps the chili "feel") half cup
1/2 red, yellow, green, orange pepper
1/2 yellow or red onion
5 organic tomatoes or 2 cans of organic diced tomatoes
garlic powder (to taste)
Taco Powder ( use less than half or a regular packet size)
Chili paste or powder (to taste-we like a lot)
Sea Salt (to taste)
Earth balance non-dairy butter
Mixed green salad
black olives (optional)
Soy cheese (optional)
Soy sour cream (optional)

I like to freeze my package of Yves "Meat" the night before , thaw and then use it-makes the consistency even more like beef. I also cook my beans and rice the night before or if I'm in a hurry, I sub canned beans (chili, red, white-whatever you chose) and cook rice along with chili and add it last.

First chop onions and peppers. Saute cooked beans, cooked rice, onions and peppers with "butter" adding taco mix together. Set Aside.

Cube your tomatoes and add them to a nice sized pot. Add Yves "meat", Chili Powder (to taste), Garlic (to taste)-let simmer for about five minutes.

Add your bean, rice, onion and pepper mix to tomatoes and "meat".

Now that everything is in the pot, Season to taste (you shouldn't need too much salt:) and let simmer.

Scoop into a bowl and top with "cheese", "sour cream" and black olives and mixed greens. Create a Frito Chili Pie or enjoy with crackers. Remember, be creative and add your own flair!
